Welcome to the brand new Palace Hotel

We all know and love the Palace Hotel, but its latest renovation has taken it to the next level. The opening night at Palace Hotel wasn’t just a reopening — it was a full-blown revival. After a multi-million dollar transformation, the historic pub (first built in 1888) has stepped confidently into a new era, blending old-school charm with a slick, modern edge. The crowd was buzzing, drinks were flowing, and the amazing musical performances captivated everyone.

Words can’t describe how delicious the food and drinks were, but we’ll give it our best shot. Crispy halloumi drizzled with pepperberry honey, smoked cauliflower arancini with warigal green pesto, tender wagyu skewers with black garlic, and so many other divine dishes that encapsulate Josephine’s Lounge’s offering upstairs. There were so many amazing cocktails, but our favourite was the lemon meringue — it was just the perfect blend of sweet, tart and creamy.
